Kainan With Kinan #2 – Beef Tapa

In the first Kainan With Kinan, I shared my favorite dish, and the first one I learned to cook — the sempiternal adobo.

Today’s Kainan With Kinan is about the adobo’s distant cousin, the equally-popular-among-Filipinos tapa! One-half of the famed Dynamic Duo called Tapsilog, the tapa is a staple in eateries, especially those that serve breakfast.

Tapsilog is pretty much the Filipino version of bacon and egg — it is a portmanteau of “tapa” and “itlog” (egg), and is usually served with a side dish of fried rice.

Like the adobo, tapa (beef tenderloin) is boiled in its marinade of soy sauce, vinegar or calamansi juice and other seasonings. It’s not a difficult dish to make but it makes a hearty meal, one that’s bound to make your start of the day great.

I’ve only recently tried to make tapa on my own, and it was due to its relative simplicity and similar procedure in making adobo.
